Produce of the Week - Peaches

March is not exactly peach season in the North East, but they have been a current food obsession of mine.  With all the meds currently in my system my taste buds are very funky (even what I can eat is limited) so I am in constant search for appealing and appetizing foods.   
Peaches and nectarines are in my top 10 this week.

So I went in search of some new recipes to try:

I love salsa and with peach added it has a lovely sweet zing:

Zucchini Cheesy Bread

My Facebook page is riddled with video recipes these days.  They come across as so quick and easy. But much more time consuming then they appear.

Recently though a friend shared this recipe by Delish on Facebook and I was intrigued.  Intrigued and haunted! The Zucchini cheesy bread was in my dreams that night, so the next morning I ran out and stocked up on the ingredients. I had to!

Truth be told - any 'bread' that doesn't use flour or grains grabs my attention. That, and anything that even resembles pizza in any way.
Luckily I was given a food processor recently and it makes all the difference in speeding through the grating/grinding process. Hand grating 3 zucchinis and all that cheese could be quite laborious and time consuming.

The recipe was easy to follow though, and impressively mine came out looking exactly like the video.  And the taste!  The taste was a winner and everyone raved.  I have made it successfully three times now.

1. Be sure to squeeze all the liquid out of the grated zucchini.  If it's too wet it takes twice as long to bake (how do I know? don't ask!) and it doesn't firm up as well.

2. Definitely serve it with a marinara sauce for dipping.

Food, Art, and Anxiety

Recently I was showing my work at an event, and my painting of the 7 Fishes, which was displayed among many others, became the magnet of many conversations.


People were drawn to it by the whimsy, the colors, the splashes of water drops, the frame... and the list went on and on. 

When I explained  the back story and that my inspiration was my friend's Christmas Eve party last year - and the dinner of the 7 Fishes - the reactions were all very powerful!  And surprisingly very polarizing.

The conversations triggered memories in all... varied memories - the joy of childhood holidays,  melancholy, sadness of missing a loved one, the like or dislike of eating seafood, the creativity of food preparation, and one woman reacted with absolute pure anxiety!  She was so stressed out she bolted from me. 
I felt terrible that a piece of my art and a conversation about inspiration could elicit that response, and yet not surprised.
The painting terrified one woman, and so captivated another that she purchased it.

Art can do that.
Food can do that. 
Memories can do that.
It all depends on where you stand and what you have lived.

Lemon Bars - gluten free dessert


 Earlier this year family we had family in town to see a Community Theater performance that my daughter was in. They came to the house for pre-show dinner, and my niece made lemon bars.

Now my daughter loves all things lemon.... Ices, sherbert, ice cream, cookies, pie, pudding, you name it - if it's a sweet treat and it has lemon, she is all over it.  She was so into the lemon bars I was afraid she would miss her curtain call. But, we jumped in the car in the nick of time, with lemon bar number 3 tucked in a little dish for her intermission snack.

Since everyone was enjoying them as much as her we had precious little leftover. We baked another batch ourselves before the week was out.  I even made it in a pie dish a few months later for PI day at school.  Such a delicious buttery shortbread crust and creamy lemon custard - there was none left over that day!
It's an simple recipe to adapt to Gluten-free, just sub your favorite GF flour. It is especially easy if you have a baking partner - while one zests and juices the lemons, the other is mixing the batter. 

We used The Pioneer Woman's recipe but there are ton of recipes out there (all quite similar) and I highly recommend trying one.  The lemon bars are very much a crowd pleaser!

What I learned from a Gluten Free Chicken Wing

I think I have always been intimidating by cutting meat. I felt like I didn't know enough about meat to cut it properly, so I avoided it. And bought everything as parts, and left any roast carving to someone else, anyone else!
Now I am not sure how you could really mess any of it up - but still I avoided because I thought I couldn't do it.

I have have more than a few assignments for Simply Gluten Free Magazine that involved cutting, carving, chopping, etc and my confidence has grown over time as I try more things.  I have found I can carve a turkey, open a rock hard raw spaghetti squash, butterfly a pork chop, create lovely pineapples cubes from a whole pineapple - and make my own drums and wingettes from whole chicken wings!

It was challenging for the first few but I got the hang of it as I went along. Also I figured if they weren't perfect nobody would care - the family was just eagerly anticipating the wings that were soon to be on the grill. So, no judgements, no mistakes, no problem.

I saved money buying the whole wings as opposed to the pre-cut packs, and put on a pot of stock with the end tips while the the wings were marinating.

My chicken wing chopping experience was like most things in life - best not to fear, face it head on, give it a shot, keep trying, and practice makes perfect!
And now matter how badly you butcher them - in the end they all tasted delicious.

Jamaican patties - Gluten Free baking

My Caribbean born husband's all-time favorite!
But, that gluten-filled flaky pastry - my nemesis as it crumbles and falls everywhere. Everywhere.
I freak out when they are in my house as it will mean diligence, and cleaning and an unsafe kitchen. It totally stresses me out. Then it puts a strain on us.  Not a good scene.

But still, Jamaican Patties.

So I finally put my fear aside and tried my hand at them. Full disclaimer I have always lived in fear of baking anything that is billed as PASTRY. Sounds like something for a much more seasoned, experienced baker. Not me.  I prefer boxed mixes so I can't mess up. Baking has always been a little scary for me. It's like magic and I didn't get the wand, or the spell.

Last week I was feeling daring so I decided to make a pan of Jamaican beef and intended to bake biscuits to serve with the beef, and a salad. Drop biscuits I kinda have down pat. (using Pamela's GF pancake mix)

I suppose I was feeling more daring than I even thought and on a whim started the pastry! Yes. Pastry! 
They would win no awards for visual presentation - they were very haphazard looking, let's say. I will need to practice a bit (or a lot) and make them a few times to improve the shape and folding, and cute fork lines around the edges (love those cute fork lines!)


But, the taste - the taste was incredible!!  
My St Thomas husband said that I nailed it!  My (gluten-free) daughter who has been desperately missing patties ate a few bites, stopped, breathed and said "and then the angels sang"
That my friends, was the best review I have ever gotten, for anything!!

I used this recipe from Food.com and I used GF baking mix from Aldi, even though the recipe calls for flour.  And, this is why I haven't been given a magic baking wand - I am always kind of flying by the seat of my pants!

Pie is awesome, I would say we can all agree on that, but I know there are others that for some crazy reason prefer cake. 

But I am, and always have been, a pie person.

Gluten-Free Snacking... Oven Baked Kale

 This weekend we were warming up the house with every kind of baking we could think of! Ignoring the frigid outside temperature, unless it was your turn to take out the dog.  But those trips were quick for even our new rescue pup was keeping close to the kitchen and the warm oven.
After baking a few sweet treats we were in the mood for something different.

Instead of reaching for a bag of chips we grabbed the kale from the crisper and made my daughter's favorite... Oven-roasted kale crisps.
Satisfying the craving for savory, crispy - and salty while getting a mega dose of vitamins, minerals and fiber.  Given how easy they are to make - it is truly a win-win situation.
The most time consuming part is the washing (and drying) of the kale leaves.  You want to be sure to dry them thoroughly so they will crisp well.  Then break off the big stem bits and rip the leaves into a few pieces each. We usually use curly kale but you can try any type of kale leaf.

Toss the leaves in a bowl with olive oil, salt, garlic powder and pepper before laying them out on a baking pan.  
Oven bake at 350 degrees for 15 - 20 minutes or until crispy (but don't let them burn)
The kale gets crisp and airy baked this way.  My 10 year old just gobbles them up!
There are lots of variations of seasonings for all tastes.
A delicious, fun way to get in a serving of greens. The crisps can also be crumbled on top of your salad.

Gluten Free Apricot Chicken review

I am constantly in search of gluten-free dinner recipes - simple and flavorful are my biggest qualifiers. And on day that I am on the run - a crockpot meal will seal the deal!

The other day I felt I covered half the state of NJ and ended the marathon with a nighttime drive back from my daughter's basketball game in a combination of heavy rain, flooding, snow, sleet and fog! 

The light at the end of the stressful tunnel was Apricot Chicken waiting for us - hot, tender, flavorful and ready upon arrival!  


I found Stephanie O'Dea's Apricot Chicken recipe from A Year of Slow Cooking.  The apricot sauce was easy to make and started with a jar of Apricot Preserves... I used Polaner All-Fruit (clearly labeled gluten-free).
The only change I made to the recipe was the addition of 5 cloves of garlic, minced.  (We are a garlic loving family).
The aroma that met us when we dragged in wet, tired, cold was truly delightful.





The chicken with it's sweet and savory sauce were poured on piles of steamy rice - a huge success! It will be part of the regular dinner rotation going forward.

Eating Chocolate, Drawing Chocolate

Today I am looking for joy and lightness of spirit. The weekend and current election climate and the high level of negativity and pain are weighing heavily on me.
I could stay buried under the covers eating chocolate all day, but not sure how much that would accomplish. 

Instead I am up, painting and preparing to sketch and paint chocolate! Which will bring me longer lasting happiness, and no guilt!
And hopefully shift my overall mood. It also serves to ease me into a productive day. What will you do today to bring joy?


It is all very well to copy what one sees, but it is far better to draw what one now only sees in one's memory. That is a transformation in which imagination collaborates with memory.

Hurricane Spaghetti

Hermine came and went earlier this week, with little effect on Northern NJ.  I consider it very lucky that she turned out to sea - and hope we can get through the rest of the season with that kind of luck! 
But, that doesn't mean I wasn't ready. After living through Irene and Super Storm Sandy - I do not take hurricane threats lightly.  Best to be prepared with essentials, because we know what bad can be.

So I stocked up on bottled water, batteries, did a little baking, brewed just-in-case coffee, filled the gas tank, had cash on hand, and kept all electronics fully charged.  
And food. 
Gluten-free food that could be eaten as is, or cooked on the stove. We have a gas stove, which has been a lifesaver when we have been without power. (I will always choose a house - and stove - with gas!)

One of the warmest memories I have of Super Storm Sandy is cooking 'Hurricane Spaghetti' by candlelight, while my husband was getting a fire going in the livingroom. We ate dinner that night at the coffee table warmed by the roaring fire, and it is one of the loveliest memories I have. So while I was gathering essentials for Hermine's arrival, spaghetti was at the top of my list.

Summer treats - Naturally gluten free

Summer is here and all the juicy, fun - and some of my favorite foods that go with it. SO happy that there are plenty of fresh naturally gluten-free options at the local farmer's markets in the area.

I have been happily creating a watercolor illustration a day for my 100 Days Project, and just passed the mid-point this week. An excellent excuse to draw and paint food!

Halfway to 100 Days - of watercolor illustrations

I was enamored with the idea of the 100 Days Project after seeing a friend, and fellow artist, Brooklyn Blue Day posting daily on Instagram.
So I made a decision to create a watercolor illustration for 100 days in a row... The process has had a tremendous impact on my art - and my life, and I will be sharing what I have learned soon.

Easy Gluten Free Mulled Wine

An easy mulled wine to brew at home, creating a fragrant brew that warms the heart and soul. Filling your home with a lovely aroma of cinnamon and cloves. This really chases away the winter chill!

 I combined a few mulled wine recipes that I found, based on what we had in the spice rack and refrigerator.  Many of the recipes had something that we didn't already have. And since I had braved the stores to stock up before the storm - I wasn't going back.  Emphasis on easy!
This was SO lovely to have waiting when we came in from our recent all-of-winter-in-one-snowstorm!  It was very much deserved and appreciated after shoveling through 28" of snow.

GF Crustless Spinach Quiche



I love quiche!  and a crustless version is a lovely and simple way to whip up a brunch. Or a perfect make ahead breakfast, just grab a slice and reheat.

I found this recipe for crustless spinach quiche on Allrecipes.com and I tweaked it a bit... using cheddar in place of muenster cheese as I was looking for bigger/bolder flavor.  
Also, I have made this with 6 chopped scallions in place of the onion.  Either way is mighty tasty.  And quite easy to make.  The hardest part is grating the cheese, and longest part is waiting for frozen spinach to defrost.



You can substitute 12 oz of fresh spinach leaves, chopped, for the package of frozen.  And, certainly the fresh spinach leaves were a better choice for my illustration!

Freezing Berries

From the July/August issue of Simply Gluten Free Magazine

Frozen strawberries on a brutally hot day!  An ideal treat.  Lucky I had some leftover from a recent assignment at Simply Gluten Free Magazine. It's been really hot by us, and truth be told - I have been melting.  Finding these ruby red, icy cold beauties in my freezer was a score!!

And, they make a terrific starting point for a refreshing smoothie.  
Ahhhhh!

Paleo Gluten and Grain Free Muffins - Recipe Review

I admit that somedays I miss bread, and I don't mean gluten bread, but any bread. I avoid even the GF flours and baked goods because of too many issues that point to a tapioca intolerance, so I gave up the lot of them. Most days I am fine with it, but sometimes I dream of bread or muffins.  I always had a weak spot for muffins!

When I stumbled on PaleOMG's zucchini apple spice muffins I was intrigued. 


And, honestly not quite convinced that the assortment of ingredients listed could actually achieve a muffin, no less a fluffy one!  Sounded more like a veggie side dish, or possibly an interesting omelet. 

I kept looking at the photo of the finished product, and dreaming of the taste and aroma so I gave it a shot.  My husband came in the kitchen while I was grating and draining the zucchini and said "I thought you were baking muffins?"  I am... hmmm, we shall see.


The recipe was simple enough, needed no complicated equipment or ingredients, and the most time consuming part was allowing the zucchini to fully drain after grating.  I poured the initial liquid off then kept flattening it with a spatula on a tilted plate while I went about other kitchen chores. Every 10 minutes or so pouring off the liquid.  

The recipe yields 9 muffins but I usually make 12 slightly smaller muffins so I can make them last longer.  The last batch I baked went too fast!  They are a new favorite, and staple, in this house which inspired my illustration! Thank you Juli - these muffins are genius!

Home brewed cold remedy


I had been burning the candle at both ends recently even though I know it never bodes well.  But I was juggling a few part time gigs, and commissions, and they dovetailed and all came due in the same week, so I did what I had to.
And got it done.
Unfortunately, sleep and self care lost priority.
And, then Easter arrived, hosting the families, and the party of 20+ was a lovely, fun and happy day!  But the cold that my hubby had at the start of weekend took hold - quickly!

I have never done well with cold medicines and such so I rely on natural methods.  Like water (lots of it!), sleep, hot tea, my nettie pot, essential oils - and my new favorite...
home brewed cold remedy!


Easy to make, soothing to sip, and very 'fragrant' (to say the least).
Ginger, garlic, cayenne pepper, lemon and honey brew.
Each packing a punch in what they bring to the immune boosting table.
I totally recommend trying this the next time you have a cold or sore throat.
